If you want to go back to standard speed Pacman, simply replace (or reburn) chip 6F this is the chip that is modified for speed up.
You may also be interested in freeplay with attract, or even high score save, which can be found here http://arcade.souzaonline.com/downloads.html

Looking at that if I want to get rid of the speed up and I'd also like to get the high score save (and I do both for the high score save and also for the attrack mode while in free play) I should just get the high score save instead of just replacing 6f all by itself?
