I have a couple of Jamma cabinets now...  Both came pre-wired and work just fine.
They have old 1980's PCB's in them that also work great.

What I want to know is, can the games be simply swapped because they are both Jamma?
(Monitor Orientation aside - I get a vertical has to go with a vertical and likewise for horizontal)
What I am asking is, will a Jamma harness from 1987 be wired the same as a 19 in 1 board I just got? Plug, configure and play?

JAMMA is there to make pcbs from 1987 up interchangeable, regardless of the cabinet. So, yes.

pretty much. However some have extra controls and audio that may need to be wired in.  The joystick and three button setup work for a ton of games, Street fighter 2 versions have kick harnesses, 4P games have 3P/and 4P connectors and some games have wired in sound cards/extra wires for speakers
