I have MK1, MK2, MK3 and UMK3 that im restoring.  Should I remove all of the sideart and repair the wood before applying new side art or just go over the old?  Anyone done this and what where your results?

If you are replacing the side art for sure, I would do a total restore. Peel off, bondo etc. After all, side art is usually the most expensive bit of any restore. Do it right and don't regret it later. Check out some YouTube videos if you need some knowledge.
