Why did the operators use the old power supplies while installing switching power supplies? Like the Galaga machine I'm trying to figure out... The lines run through the old power supply. Alot of operators would do anything to get the machines back up as soon as possible because the longer they were down the less money they made

This is something a collector or pro restorer would do, though, and what you're describing sounds like a quick fix as described above.
