I recently purchased a pacman and all the color shows on the screen except for red what can be causing this?

I would guess the monitor is missing the red color and not the game. its possible the color prom is bad but I would start with the monitor. If you have any other game that you could try with the monitor that would help.

Look up grounding each color pin on the back of the neckboard as you can isolate/display each RGB color for the monitor.

Reflow solder on the video connector pins isn't a bad idea either

That's how I started on my Mrs. Pacman, no red on the screen. It was the diode the controls the red gun on the neck board. They are cheap and easy to swap if you can solder, you should just replace all three diodes for the red, green and blue. See what that does.

First find out where the problem is situated. You can easily swap the blue and red feeding into the monitor. Now blue gone -> board. Red still gone -> monitor.

Good luck!
